My MM: Rachael’s Meatless Monday Menu
Happy Monday, everyone! Despite some controversy over these posts we’ve decided that the merits outweigh the downfalls—do you agree or notsomuch?—and are going to continue the series as long as we keep getting your wonderful menus. My dietary leanings: I’ve been vegan for the last few months, and vegetarian since I was 10. I don’t eat soy so coming up with new things to eat can be difficult. I’m surrounded by meat eaters and when other people find out that there’s a vegan who doesn’t eat soy they suddenly have no clue what I eat.
My favorite vegetable: Do avocados count? I eat those out of the skin with a spoon they’re so good. Butternut squash is my second favorite only because it has to be cooked before you can eat it.
For Breakfast: I’m usually up pretty early for work so I like to have a big bowl of oatmeal with fruit, brown rice milk, and maple syrup. Before eating breakfast I have a glass of water to wake up my insides. I also had half a bagel with pumpkin spread and drank about 2 1/2 cups of chai tea that I blended, although I didn’t put any whitener or sugar.
For a snack: I drank green juice (made with kale, half a cucumber, ginger, lemon, etc) and had a big handful of dehydrated zucchini.
For lunch: I had potato lentil soup and a square of very dark chocolate.
For dinner: For dinner I had roasted butternut squash and red onions with tahini sauce, zataar, and coriander. On the side I had giant Israeli couscous with broccoli mixed in. After dinner I had a bit more chocolate because it’s wonderful.
