My MM: Emilja’s Meatless Monday Menu
Today, Meatless Monday takes a decidedly Marie Antoinette type turn with Emilja’s menu from Paris—proving that a girl can be vegan and eat her cake too! (She even supplied us with lovely photos of some faves—of course, we went with the tres jolie pink teapot.)
My dietary leanings: vegan
My favorite vegetable: Cake is a vegetable, right? Okay okay, if I have to – I pick seaweed!
This morning I….
Made a brown rice porridge with vanilla soy milk, dried cranberries, sultanas, almonds, cinnamon and a sprinkle of brown sugar, with a pot of jasmine green tea.
Then for lunch I…
Shared my boyfriend’s famous “Everything Salad” – which involves him chopping up whatever we have in the fridge, at random, putting it in a bowl, and dressing it – always something different! Today it was quinoa with raw carrot, red pepper, cucumber, courgette, tomatoes, spinach, cashews, wakame, dulse, and (cooked) kidney beans, with soy sauce, rice vinegar and a touch of balsamic vinegar too.
I snacked on…
An orange, and later, some toasted chickpeas.
Finally for dinner…
A delicious pumpkin soup with roasted chestnuts, served with a grain-topped rye bread.
Last but not least, dessert…
Chocolate cake (my favourite recipe in the world), and chocolate tea with vanilla soy!
